Kitchen Adventures: Meal Prepped Breakfast

Meal Prepping is such a time saver, especially when it comes to meal prepping breakfasts.  We all know how crazy some mornings can be.  Making breakfast ahead of time can alleviate some of the morning mayhem we all experience.  These egg muffins are healthy, filling, and easy to make.  I would pop them in the microwave for about thirty seconds, and eat them before heading out the door last semester.  

Ingredients:
cooking spray
6 eggs
1/4 cup milk
1/8 teaspoon salt
1/8 teaspoon pepper
1 red pepper
3/4 cup spinach
1/4 cup shredded cheddar cheese


Recipe:
Spray a muffin tin with cooking spray.

Preheat oven to 375. 

Whisk the eggs and milk in a bowl and add salt/pepper.

Dice the red  pepper, cut the spinach into small pieces.

Add the red pepper, spinach, and cheese to the egg mixture. 

Fill the muffin cups about three quarters of the way full.

Bake for 25 minutes.

Work Week Breakfasts

We all know that breakfast is the most important meal of the day, but yet it's the meal most likely to be skipped by most of us.  During the work week, most of us would rather spend a few extra minutes sleeping rather than making time to eat the first meal of the day.  I used to be really guilty about this, but over the past year or so I've changed my habits and it's made a big difference. Eating breakfast each morning has given me more energy and a less chaotic launch to my day.

Here are a few tips that might make eating breakfast easier:

Make it ahead of time
When you do meal prepping in advance, then you don't have to waste anytime in the morning deciding what to eat or cooking.  Try to plan out your breakfasts on Sunday night, so that you don't have to think about it during the week. On Sunday night you could even prepare a few breakfasts ahead of time.  Preparing breakfast ahead of time could be simply placing yogurt and fruit in a container as well as placing your granola in a zip lock bag, preparing overnight oats, pre-cutting the bagel you will eat. slicing fruit, or even putting all the ingredients in the bullet blender cup for your morning smoothie.

Establish a morning routine
Establishing a morning routine will schedule you time to eat breakfast regularly. Like I said earlier, most of us don't eat because we don't have time. If you allow yourself time, then you can definitely indulge on the most important meal of the day. Play around a little bit to figure out what works best for you. I personally have found that showering the night before gives me extra time in the morning to eat breakfast.

Make one morning special
Try to pick out one morning a week to treat yourself to a special breakfast. This might be stopping at Starbucks for your favorite latte, eating leftovers for breakfast, something that might not be as healthy, or taking extra time to make your favorite breakfast (waffles, pancakes, etc.).

On the go options
Stock up on a few items that you can always bring to eat while you're en route to your morning activity.  Some items to keep around might be fruit, granola bars, or dry cereal.

Go To Breakfasts for Summer

Everyone knows that breakfast is the most important part of the meal. This meal is the one that jumpstarts your day and provides you with the energy you need to get going.  During the summer I tend to eat later in the day just because I wake up later and I don't have to rush out of the house. The laid back nature about summer allows me to spend more time making breakfast some mornings.  I like to eat a hearty and healthy breakfast that will fill me up for several hours and give me energy to get my unrealistic to do lists accomplished. 

Banana + granola bar
This is my on the go breakfast. This is what I will eat when I don't have time to sit down and eat. My go to granola bar is either a Kind Bar or Clif Bar. 

Oatmeal with fresh fruit 
Lately I have been loving McCan's Maple and Brown Sugar instant oatmeal. Instead of adding milk to cool it down, I have been opting for two tablespoons for plain yogurt.  I add a little extra flavor with fresh blueberries or strawberries. The fruit helps to fill me up and makes the meal a little sweeter. 

Avocado Toast
I seriously could write a whole post dedicated solely to avocado toasts because one there are so many ways you can make it and two I just love it so much! I like to toast a piece or two of whole wheat bread (depending how hungry I am). I usually use a quarter to half an avocado and spread it on the toast with a fork. My spreading is more like mashing the avocado.  I then add whatever toppings I can find in my fridge. In this picture I added tomatoes and a sprinkling of mozzarella cheese. If I am feeling extra hungry I'll add a fried egg on top. 
 
Yogurt, granola, and fruit
This is definitely one of my preferred post-workout breakfasts or if it's really hot out.  I like to use a flavored yogurt (strawberry, blueberry, raspberry, etc.).  I have been using a yogurt that we get at a local farmer's market, but I also love Nosa yogurt.  Most recently I have been using Bear Naked Vanilla and Almond granola. This granola is really tasty and adds a bit of flavor to the homemade parfait.  I then top my yogurt and granola with fruit (banana/strawberries/blueberries/raspberries/mango/peaches).


Pancakes
I love pancakes. There are so many yummy things you can put in them to make them taste even better. This summer I have been on a blueberry pancake kick. I made them for my mom and I Sunday morning. 


Egg sandwich 
If I have a busy day where I know I won't be eating lunch until later, this is definitely my go to. I make many different kinds of breakfast sandwiches. It honestly just depends on what we have in our fridge.

 Some combinations include: 
+brie cheese/sun dried tomato pesto/egg whites/spinach
+american cheese/fried egg/ham
+cheddar cheese/egg whites/ spinach
+parmasean cheese/tomato sauce/fried egg



Smoothie
This is another one of my go to on the go breakfasts. Most recently my smoothies have included chocolate syrup, peanut butter, frozen strawberries, fresh blueberries, a frozen banana, a scoop of yogurt, and a little bit of milk. This is another breakfast I like to enjoy when it's really hot out or right after I workout.
